For this new release, we decided to partner for the first time with Forest Green Coffee to bring you a farm we've had our eyes on for years: El Vergel Estate. Their mastery of coffee processing has made them famous worldwide, and this beautiful Natural Carbonic Maceration Java is the perfect example!

Nestled in the Tolima region of Colombia, El Vergel Estate is the result of decades of dedication from the Bayter family. Originally an avocado farm, the family's journey into coffee began in 2006 when market shifts pushed them to explore new crops. What started with traditional coffee varieties quickly evolved into an ambitious pursuit of specialty coffee, guided by expert mentorship and relentless experimentation. Today, El Vergel is known for its innovative approach to fermentation and processing, with Martha Montenegro, Elias, and Shady Bayter leading the way. Their commitment to technology, sustainability, and quality has turned the estate into a benchmark for excellence in the coffee world.

This lot is a first for El Vergel: a Natural Carbonic Maceration Java. The process begins with a high-pressure CO2 injection at up to 6 bars, creating an anaerobic environment that encourages unique fermentation pathways. Over 96 hours, the breakdown of the coffee cherry’s skin allows microorganisms to work their magic, developing vibrant and complex flavors. Once fermentation is complete, the beans are sun-dried on raised beds for 25 days, then carefully stabilized in GrainPro bags for 45 days to preserve their integrity before milling.

The result is a coffee bursting with tropicals! Juicy pineapple, zesty kiwi, and rich passion fruit, balanced by delicate chamomile florals. It’s bright, complex, and full of life, a true testament to the experimental spirit of El Vergel, and we can’t wait for you to experience it!

To make our coffees more accessible, at Boo! we decided to only produce omni roastThat means that all of our coffees are meant to be used both as espresso or filter coffee. Follow our recipes at the bottom to get the best result with each coffee!

Recommanded recipe :

For espresso :

If possible on your machine, we always recommend setting a pre-infusion of 5-10 seconds at lower pressure then ramping up to 9 bar for the rest of the extraction.
Our recipe for this coffee would be: 18g in and 45g out in about 23-26 seconds.

Our filter recipes are based on a classic V60 size 01 with CAFEC abaca filters.
Amount of coffee : 15g
Grind size : medium-fine
Water : 230g at 95°C

0:00 - Blooming - Pour 50g (gentle swirl when finished pouring)

0:45 - Circular pour to 100g

1:00 - Circular pour to 150g

1:20 - Circular pour to 200g

1:45 - Circular pour to 230g, followed by a gentle swirl.

Drawdown should be around 2:00-2:15
