Located in the heart of the beautiful Valle Del Cauca in Huila, Finca Bet-el is one of the first farms we got in contact with when we started working on Boo! We had a couple of samples sent over to us by Cesar, the owner and producer of Finca Bet-el, and when we tried this pink bourbon, we instantly knew it needed to be featured on our menu!

One of the goals of Finca Bet-el is agro-ecological production and some of the steps they took to achieve that is to process most of their coffees as natural, or in the case of this one, as semi-washed, to limit the amount of water usage.

Cesar's approach to processing this coffee is really interesting! The coffee first goes through fermentation as whole cherries for 48 hours, then the pulp is removed and it goes through a second fermentation for 36 hours. This time, the remaining fermentation juice of Cesar's naturally processed gesha coffees is added to the tank, giving this lot that intense fruity flavor profile! After this, the coffee is being washed but where in a typical washed process, they would use around 120 liters of water per kg of coffee, here they manage to reduce it to only 5 liters! Finally, the coffee is dried mechanically and stabilized for conservation.

The result is an incredibly sweet and refreshing coffee reminding us of a strawberry lemonade you would be sipping under the sun. This is the perfect coffee for this summer!

To make our coffees more accessible, at Boo! we decided to only produce omni roastThat means that all of our coffees are meant to be used both as espresso or filter coffee. Follow our recipes at the bottom to get the best result with each coffee!

Recommanded recipe :

For espresso :

If possible on your machine, we always recommend setting a pre-infusion of 5-10 seconds at lower pressure then ramping up to 9 bar for the rest of the extraction.
Our recipe for this coffee would be: 18g in and 45g out in about 24-26 seconds.

Our filter recipes are based on a classic V60 size 01 with CAFEC abaca filters.
Amount of coffee : 15g
Grind size : medium
Water : 240g at 95°C

0:00 - Blooming - Pour 50g (gentle swirl when finished pouring)

1:00 - Circular pour to 150g

1:30 - Circular pour to 200g

1:45 - Circular pour to 240g, followed by a gentle swirl.

Drawdown should be around 2:30
