One of the things we wanted to introduce in this new year was a limited edition series, where we could showcase wild and fun coffees that wouldn't fit in our ranges. And what better way to start this series than with a Valentine's Special?


Introducing SO IN LOVE./(NOT) SO IN LOVE., a delicious co-fermented honey process from Colombia that tastes like no other coffee we've ever had!


Los Patios is a processing facility built by The Coffee Quest in 2022 in La Plata, Huila. Their goal was to collaborate with local producers to implement strategic initiatives, focusing on developing processes that would help enhance cupping scores and create unique profiles.

Developed by their Research and Development team, this lot aims to elevate Castillo's traditional and robust profile, complementing it with a punch of red fruits.

De-pulped cherries are bought from various producers in the region, who handle the first processing stage, a 12-hour aerobic fermentation.
Once at Los Patios, the R&D team adds a red fruit concentrate, along with their own proprietary solution to the de-pulped coffee. This fermentation and absorption phase lasts for 2 days until the coffee is drained and placed to dry for between 12 to 16 days, where it is monitored and rotated constantly to ensure an even drying.

The result of this intense focus on processing is a one-of-a-kind cup profile. You'll find plenty of red fruits such as strawberries and cherries with hints of vanilla, but what blew us up is the lactic, ice-cream-like feel that you get from the first sip! Truly a coffee that will be hard to forget!

To make our coffees more accessible, at Boo! we decided to only produce omni roastThat means that all of our coffees are meant to be used both as espresso or filter coffee. Follow our recipes at the bottom to get the best result with each coffee!

Recommanded recipe :

For espresso :

If possible on your machine, we always recommend setting a pre-infusion of 5-10 seconds at lower pressure then ramping up to 9 bar for the rest of the extraction.
Our recipe for this coffee would be: 17g in and 40g out in about 26-28 seconds.

Our filter recipes are based on a classic V60 size 01 with CAFEC abaca filters.
Amount of coffee : 15g
Grind size : medium
Water : 240g at 93°C

0:00 - Blooming - Pour 50g (gentle swirl when finished pouring)

0:45 - Circular pour to 100g

1:00 - Circular pour to 150g

1:15 - Circular pour to 200g

1:30 - Circular pour to 250, followed by a gentle swirl.

Drawdown should be around 2:15-2:30
