El Salvador - Los Naranjos
We don't see many lots from El Salvador hitting the shelves of specialty roasters these days, which is a shame knowing it's home to some beautiful coffee farms and quality producers, such as Finca Los Naranjos, located in the Sonsonate district.
Nature is at the core of Finca Los Naranjos's vision as it is part of the considered coffee forest, which is maintained under regulated shade with native and forest species. These species have an impact on the soil and environment, creating a unique micro-climate that not only enhances the production of high-quality coffee but also fosters interaction between the surrounding flora and fauna.
SL-28 is a coffee variety that finds its origin in Kenya, where it's praised for its high acidity. Now also harvested in Central and South America, it often results in a vibrant and complex cup profile, and this coffee is the perfect example!
The coffee first goes into closed fermentation tanks as whole cherries for 48 hours before being de-pulped and then going through another 48 hours of fermentation. The coffee is then transferred to open fermentation piles (aerobic fermentation) for another 24 hours and then washed.
For the drying phase, the coffee is first left on patios for 3-5 days to stop the fermentation and then placed on African beds, first on the lower level for a period of 3-5 days and finally on the top level for 8-10 days, until it reaches 10% humidity.
The result is a really surprising, sweet, and complex coffee with notes of passion fruit and raspberry and a sparkling acidity that reminded us of a zesty cola!
To make our coffees more accessible, at Boo! we decided to only produce omni roast. That means that all of our coffees are meant to be used both as espresso or filter coffee. Follow our recipes at the bottom to get the best result with each coffee!

For espresso :
If possible on your machine, we always recommend setting a pre-infusion of 5-10 seconds at lower pressure then ramping up to 9 bar for the rest of the extraction.
Our recipe for this coffee would be: 18g in and 44g out in about 26-28 seconds.

Our filter recipes are based on a classic V60 size 01 with CAFEC abaca filters.
Amount of coffee : 15g
Grind size : medium
Water : 235g at 93°C
0:00 - Blooming - Pour 50g (gentle swirl when finished pouring)
1:00 - Circular pour to 150g
1:30 - Circular pour to 235g, followed by a gentle swirl.
Drawdown should be around 2:00-2:15
