This lot, sourced through our friends at Falcon Coffee, is everything we love about Kenyan coffees! A cup full of citrus, smooth acidity, and raw sugar-like sweetness makes this your perfect morning cup.
The Karuthi wet mill was built in the 1980s, which makes it younger and with a smaller production than you would typically find in the region.
It is located in Nyeri county, known for producing high-quality coffees in Kenya due to the high altitude, fertile soil, and seasonal rainfall that makes it ideal for coffee production.
About 400 farmers are members of the cooperative that produces this lot.
The coffee is first pulped before being left to ferment for about 12-48 hours, depending on the weather. It is then washed to remove the last part of the mucilage and placed on raised African beds, where it will dry over the course of 2-3 weeks until the moisture level is about 12%. The cooperative also has a dry mill, where the beans rest in parchment for 3 weeks before being hulled, cleaned, and sorted by size.
What we love about this Kenyan lot is how balanced and easy-drinking it is. You can expect a smooth acidity with notes of grapefruit and dried lemon and a sweetness that reminds us of raw sugar and apricot.
To make our coffees more accessible, at Boo! we decided to only produce omni roast. That means that all of our coffees are meant to be used both as espresso or filter coffee. Follow our recipes at the bottom to get the best result with each coffee!

If possible on your machine, we always recommend setting a pre-infusion of 5-10 seconds at lower pressure then ramping up to 9 bar for the rest of the extraction.
Our recipe for this coffee would be: 18g in and 44g out in about 22-25 seconds.

Our filter recipes are based on a classic V60 size 01 with CAFEC abaca filters.
Amount of coffee : 15g
Grind size : medium
Water : 250g at 94°C
0:00 - Blooming - Pour 50g (gentle swirl when finished pouring)
1:00 - Circular pour to 150g
1:30 - Circular pour to 200g
1:45 - Circular pour to 250g, followed by a gentle swirl.
Drawdown should be around 2:15-2:30
