Our new Sunlight Blend is designed to brighten up your mornings. Smooth, sweet, and just fruity enough to keep things interesting. This is our take on the classic morning coffee: comforting, versatile, and endlessly drinkable, whether as a black filter brew or a creamy espresso.

The Idea
We revisited Sunlight from the ground up. While our previous version leaned more heavily on fruit-forward notes, we wanted something more balanced for everyday enjoyment. The new profile is round and chocolatey, with gentle hints of cherry jam and dried cranberries. Think milk chocolate, nougat, and a soft red fruit acidity, like a pastry pairing in a cup.

Sunlight is a 50/50 blend of a natural Brazil from Rancho Grande and a washed Colombia from The Green Coffee Company in Salgar, Antioquia.

From Brazil, we selected the Manga Larga lot, named after a local breed of horse known for its elegance and strength, and produced by the Reis family at Rancho Grande. Grown in the Sul de Minas region and slowly dried in static boxes after a short anaerobic phase, this coffee brings creamy body, mellow sweetness, and a whisper of fruit.

From Colombia, we sourced a clean and consistent washed lot from the country’s largest and most technologically advanced estate. The Green Coffee Company is redefining Colombian coffee with a focus on innovation, sustainability, and social equity. This component adds structure, clarity, and a touch of red fruit to the blend.

Sunlight is smooth and round with a velvety body and crowd-pleasing balance. Expect classic notes of milk chocolate and nougat, lifted by subtle accents of cherry jam and dried cranberry. It’s a blend that shines across brew methods. Cozy in milk, elegant on filter, and clean on espresso.

Please note that our recipes are just guidelines of how we like to brew these coffees. Grinders, water, and equipment are some of the variables that could change the end result. So take these recipes as starting points, but not as absolute goal.

Espresso:
We pull our espressos on a Linea Mini R, with water around 120 ppm and a Mahlkönig X54 grinder.
We like to pull this coffee at 18g in, 40g out in about 27–29 seconds.


Filter coffee:
We brew our filter coffees on a plastic V60, with CAFEC ABACA filters and Third Wave Water light roast water.
We like to brew this coffee with 15g of coffee, water at 90°C and a medium-coarse grind size.

  • 0:00 – Pour 50g of water and let it bloom for 45 seconds.
  • 0:45 – Pour 100g of water in a circular motion.
  • 1:25 – Pour 70g of water in a circular motion.

Total brew time should be 2:00 to 2:15.
