Sunlight
Sunlight is our second signature coffee and is in opposition to Moonlight. Our goal was to showcase what a light roast specialty blend is all about. Bringing you a brighter, fruit-forward coffee that still packs some sweetness! Making Sunlight the perfect coffee if you’re looking for a balanced, yet fruity profile!
For Sunlight, at the moment, we chose to work with coffee from Burundi and Colombia. The Burundian coffee has a sweet red berries profile with a light body and when mixed with the Colombian coffee, which has notes of stone fruits and a heavier body, creates a very well-balanced fruity cup!
When it comes to blending, our approach is first to define a specific flavor profile and then work our way to reach that flavor by trying and choosing different origins. This approach allows us to bring you a constant flavor profile all year long while working with seasonability and switching origin when needed to always offer you the freshest coffee!
To make our coffees more accessible, at Boo! we decided to only produce omni roast. That means that all of our coffees are meant to be used both as espresso or filter coffee. Follow our recipes at the bottom to get the best result with each coffee!

For espresso:
If possible on your machine, we always recommend setting a pre-infusion of 5-10 seconds at lower pressure then ramping up to 9bar for the rest of the extraction.
Our recipe for this coffee would be: 18g in and 42g out in about 26-30 seconds.

For filter:
Our filter recipes are based on a classic V60 size 01 with CAFEC abaca filters.
Amount of coffee : 15g
Grind size : medium
Water : 250g at 93°C
0:00 - Blooming - Pour 50g (gentle swirl when finished pouring)
0:45 - Circular pour to 150g
1:25 - Circular pour to 250g, followed by a gentle swirl.
Drawdown should be between 2:15 and 2:30
