Sweet Treat is our new fall edition, a coffee we chose for its comforting, pastry-like profile. Imagine a cozy afternoon, a warm pastry fresh from the oven, and a cup that feels like a hug.

The lot comes from Los Nogales farm in Huila, Colombia, and was sourced through our partners at CATA Export. CATA’s mission is to support small producers who often lack access to international markets, helping them bring their coffees to a wider audience.

By working closely with Nogales and their 30+ families of pickers, they’ve built a replicable fermentation and post-harvest protocol that elevates the quality of humble, everyday coffee into something truly special.

This lot is processed as a Semi-Washed, following a carefully developed protocol:

  • Manual collection of 100% ripe cherries
  • Oxidation in open tanks for 72–84 hours
  • Pulping of cherries
  • Anaerobic fermentation in plastic tanks for 36 hours
  • Slight wash to remove part of the mucilage
  • Sun-dried for 15–20 days, with beans turned three times a day for uniformity

This approach reflects CATA’s focus on clean agriculture, careful fermentation, and organic fertilization methods that both improve cup quality and benefit the environment.

Sweet, cozy, and indulgent. This fall edition brings the comfort of dessert into your cup, with notes of chocolate spread, doughnut, cardamom cream, and cherry jelly.

This is a humble yet deeply satisfying coffee, perfect for espresso or filter, and especially suited to those chilly fall mornings.

Please note that our recipes are just guidelines of how we like to brew these coffees. Grinders, water, and equipment are some of the variables that could change the end result. So take these recipes as starting points, but not as absolute goal.

Espresso:
We pull our espressos on a Linea Mini R, with water around 100 ppm and a Mahlkönig X54 grinder.
We like to pull this coffee at 18.5g in, 40g out in about 26–28 seconds.


Filter coffee:
We brew our filter coffees on a plastic V60, with CAFEC ABACA filters and Third Wave Water light roast water.
We like to brew this coffee with 15g of coffee, water at 95°C and a medium-fine grind size.

  • 0:00 – Pour 50g of water and let it bloom for 45 seconds.
  • 0:45 – Pour 50g of water in a circular motion.
  • 1:10 – Pour 50g of water in a circular motion.
  • 1:35 – Pour 50g of water in a circular motion.
  • 1:50 – Pour 40g of water in a circular motion.

Total brew time should be 2:00 to 2:00.
